Our specificities

We are the only certified organic wine growers at Quincy. We bannish the use of chemical products (fertilizers or pesticides). Weed control is made mechanically and helps the vine’s roots to grow deeper.

Our wine is made at the Chai de Maison Blanche.
Wine making process :

  • pneumatic pressing.
  • fermentation with selected yeasts or indigenous yeasts, in stainless steel temperature controlled tanks.
  • gross lees are racked off in November and the wines age on their fine lees.
  • we try to have quite a long ageing in order to fix aromas for a long time.
  • concerning sulphites, we try to adjust quantities, to guarantee a good wine quality respecting the consumer’s health.
